Tasting Notes
A rich golden colour the wine shows aromas fresh, peach and dried apricot flavours, overlaid with a tropical lushness of ripe melon and pineapple. The palate has ripe sweetness with granadilla and gooseberry yet tangy, with sweet and sour flavours like baked apples, clove spice, and marmalade on the finish

Winemaking
The Honey Thief is made from a single vineyard growing in the Roberstsvlei area of the Franschhoek valley. A specific portion of a vineyard that we use for our Two Dogs a Peacock and a Horse, Sauvignon Blanc was selected and left to naturally dehydrate on the vines. The grapes were harvest end of April at a sugar level of 48 °Balling showing a great balance of concentrated tropical fruits and fresh acidity. All our fruit is handpicked in the early morning and handled reductively to preserve the integrity of the fruit. After destemming a period of skin contact was allowed to further enhance the flavor profile of the juice. A light pressing was followed by 3 days of cold settling to clarify the juice.
The juice was inoculated using a Sauterne yeast culture to insure a strong but even fermentation.

12 months, 50% old French oak and 50% tank
